Ingredients

The pasta

  • 1 tablespoon extra-virgin olive oil
  • 1 pound ground chicken or ground turkey
  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 ¾ cups water, plus more as needed
  • 1 cup prepared salsa
  • 1 can (8-ounce) tomato sauce
  • 1 ½ cups uncooked whole wheat pasta
  • 1 can (15-ounce) reduced-sodium black beans, rinsed and drained
  • 1 cup shredded sharp cheddar cheese, divided

For serving

  • to taste sliced avocado
  • to taste nonfat plain Greek yogurt
  • to taste chopped fresh cilantro
  • to taste jalapeño
  • to taste any taco topping you love

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground chicken, onion, and bell peppers; cook until meat is browned and onions are translucent.
  3. Stir in garlic, chili powder, cumin, oregano, salt, and pepper; cook until garlic is fragrant.
  4. Add water, salsa, tomato sauce, pasta, and black beans; cover and simmer until pasta is al dente.
  5. Remove from heat, stir in half of the cheese, and sprinkle the remaining cheese on top. Serve hot with toppings.
