Instructions
- Heat half the olive oil in a large pot and sauté the onion for a couple of minutes.
- Add the peppers and cook until they are crisp tender, then remove most of the mixture and set aside.
- Add the remaining olive oil to the pot and cook the chicken until just cooked through, seasoning with taco seasoning.
- Return the peppers and onions to the pot, then add the broth, pasta, salsa, and beans.
- If needed, add additional water to cover the ingredients and bring to a boil.
- Lower the heat to simmer for about 10 minutes, stirring occasionally and testing the pasta for doneness.
- Serve immediately topped with scallions, cilantro, extra salsa, and grated cheese if desired.
