Ingredients

The main ingredients

  • 1 tbs olive oil
  • 1 medium onion
  • 1 medium red pepper
  • 1 medium yellow pepper
  • 1 lb chicken breast
  • 1 tsp taco seasoning
  • 4 cups chicken broth
  • 1 cup salsa
  • 12 oz pasta
  • 2 cups cooked pinto beans
  • 3 medium scallions

Optional toppings

  • to taste cilantro
  • to taste extra salsa
  • to taste grated cheese

Instructions

  1. Heat half the olive oil in a large pot and sauté the onion for a couple of minutes.
  2. Add the peppers and cook until they are crisp tender, then remove most of the mixture and set aside.
  3. Add the remaining olive oil to the pot and cook the chicken until just cooked through, seasoning with taco seasoning.
  4. Return the peppers and onions to the pot, then add the broth, pasta, salsa, and beans.
  5. If needed, add additional water to cover the ingredients and bring to a boil.
  6. Lower the heat to simmer for about 10 minutes, stirring occasionally and testing the pasta for doneness.
  7. Serve immediately topped with scallions, cilantro, extra salsa, and grated cheese if desired.
