Ingredients

The beef

  • 1 tablespoon olive oil
  • 1 pound lean ground beef

The spices

  • 1-2 tablespoons oil
  • 1 medium chopped onion
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 2 teaspoons dried oregano
  • 1-2 teaspoons bouillon
  • 1 jalapeño seeded and finely chopped

The pasta

  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 4 ounces green chili peppers
  • cups frozen corn
  • 8 ounces pasta
  • 2 cups beef or chicken broth

Optional toppings

  • 1-2 cups shredded cheese
  • to taste sour cream
  • to taste cilantro
  • to taste chopped green onions
  • to taste sliced avocado
  • to taste tortilla strips

Instructions

  1. Heat oil in a skillet over medium-high heat and brown the ground beef.
  2. Remove the beef and set aside, then sauté the onion and garlic in the same pan until soft.
  3. Add the spices and jalapeño, stirring for about 30 seconds.
  4. Return the beef to the pan and add the diced tomatoes, tomato sauce, green chili, corn, pasta, and broth.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, adjusting seasoning as needed.
  6. Serve warm, topped with cheese and other optional ingredients.
