Healthy Taco Pasta

Ingredients

The pasta

  • 4 cups dry pasta

The filling

  • 2 tbsp olive oil
  • ½ large white onion, diced
  • 1 tsp garlic, minced
  • 1 small red pepper, diced
  • 1 lb ground beef
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained and rinsed
  • 1 packet taco seasoning
  • 1 15 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 casserole dish.
  2. Cook the pasta according to the package instructions, then drain and set aside.
  3. In a large pan or Dutch oven over medium-high heat, add olive oil and heat.
  4. Add the diced onion and red pepper to the pan and sauté until softened.
  5. Add the minced garlic and cook for an additional minute.
  6. Add the ground beef and cook until no longer pink, then drain excess fat.
  7. Return the mixture to the pan and reduce heat to low.
  8. Stir in the black beans, corn, and taco seasoning, mixing well.
  9. Add the diced tomatoes and tomato sauce, and let simmer for 5 minutes.
  10. Stir in the cooked pasta until well combined.
  11. Pour the mixture into the prepared casserole dish and top with shredded cheddar cheese.
  12. Bake in the oven for 10 minutes, then let cool for a few minutes before serving.
