Instructions
- Preheat the oven to 350°F and grease a 9x13 casserole dish.
- Cook the pasta according to the package instructions, then drain and set aside.
- In a large pan or Dutch oven over medium-high heat, add olive oil and heat.
- Add the diced onion and red pepper to the pan and sauté until softened.
- Add the minced garlic and cook for an additional minute.
- Add the ground beef and cook until no longer pink, then drain excess fat.
- Return the mixture to the pan and reduce heat to low.
- Stir in the black beans, corn, and taco seasoning, mixing well.
- Add the diced tomatoes and tomato sauce, and let simmer for 5 minutes.
- Stir in the cooked pasta until well combined.
- Pour the mixture into the prepared casserole dish and top with shredded cheddar cheese.
- Bake in the oven for 10 minutes, then let cool for a few minutes before serving.
