Ingredients

The Pasta

  • 10 oz rotini pasta

The Meat and Vegetables

  • 1/2 cup chopped onions
  • 3 cloves garlic
  • 1 pound ground beef or turkey

The Sauce

  • 15.5 oz diced tomatoes and chilies
  • 1 cup beef broth
  • 1 cup milk or heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon all-purpose flour
  • 1 tablespoon water

The Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • to taste salt and pepper
  • 1 teaspoon cayenne pepper (optional)

Instructions

  1. Cook the pasta according to package instructions.
  2. In a large pot, cook the ground beef or turkey over medium-high heat, adding the taco seasoning.
  3. Add the onions and garlic, cooking until the meat is no longer pink.
  4. Drain excess fat if necessary, then add diced tomatoes, broth, cream or milk, and shredded cheese.
  5. Combine flour and water to create a slurry, then add it to the pot to thicken the sauce.
  6. Allow the sauce to thicken for up to 10 minutes, stirring occasionally.
  7. Add the cooked pasta to the pot, reduce heat to low, cover, and simmer for 10-15 minutes.
