Ingredients

  • 2 cups black rice
  • 3 ½ cups water
  • 1 unit cucumber
  • 1 unit avocado
  • 1 cup shredded carrots
  • ¾ lb cooked shrimp, thinly sliced
  • cup rice vinegar
  • 1 tbsp rice vinegar for coating avocado
  • 10 drops stevia
  • 1 tbsp salt
  • 6 sheets nori

Optional ingredients

  • to taste unit coconut aminos for dipping
  • to taste unit wasabi

Instructions

  1. Prepare the black rice according to package instructions, typically boiling it with water and then simmering until cooked.
  2. Let the cooked rice cool completely in a mixing bowl.
  3. While the rice cools, prepare the cucumber by slicing it in half, removing seeds, and cutting it into thin strips.
  4. Cut the avocado in half, remove the pit, slice the flesh, and rub with rice vinegar to prevent browning.
  5. Assemble your sushi station with all fillings and a sushi roller.
  6. Mix rice vinegar, stevia, and salt in a bowl, then pour over the cooled rice and stir to combine.
  7. Spread ⅔ cup of rice onto a nori sheet, leaving 2 inches at the top.
  8. Place the fillings in a line across the rice.
  9. Roll the sushi tightly using the sushi roller, sealing the edge with water.
  10. Cut the roll into 8 even slices and serve.
