Instructions
- Wash the sushi rice under running water, drain, and place in a rice cooker with the Kombu kelp.
- Cook the rice and prepare the sushi vinegar by heating the vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, transfer it to a bowl and mix in the vinegar mixture.
- Cut the imitation crab meat, cucumber, and avocado into long matchstick shapes.
- Lay a sheet of cling wrap over a bamboo sushi mat, then place a nori sheet on top.
- Spread a cup of sushi rice evenly over the nori using wet hands.
- Flip the nori and rice over, then spread mayonnaise in the center.
- Layer the crab meat, cucumber, and avocado on top of the mayonnaise.
- Roll the sushi tightly using the bamboo mat, squeezing as you go.
- Slice the roll into 6 pieces using a sharp knife.
