Ingredients

Sushi Rice

  • 2 cups sushi rice
  • 4 tbsp rice vinegar
  • 2 tbsp sugar
  • 2 tsp salt
  • 1 piece Kombu kelp strip
  • 1.8 cups water

California Rolls

  • 5 sheets Nori seaweed
  • 6 pieces imitation crab meat (Kanikama)
  • 1 piece cucumber
  • 1 small avocado
  • 5 tsp Japanese mayonnaise
  • 5 tsp white sesame seeds

Instructions

  1. Wash the sushi rice under running water, drain, and place in a rice cooker with the Kombu kelp.
  2. Cook the rice and prepare the sushi vinegar by heating the vinegar, sugar, and salt until dissolved.
  3. Once the rice is cooked, transfer it to a bowl and mix in the vinegar mixture.
  4. Cut the imitation crab meat, cucumber, and avocado into long matchstick shapes.
  5. Lay a sheet of cling wrap over a bamboo sushi mat, then place a nori sheet on top.
  6. Spread a cup of sushi rice evenly over the nori using wet hands.
  7. Flip the nori and rice over, then spread mayonnaise in the center.
  8. Layer the crab meat, cucumber, and avocado on top of the mayonnaise.
  9. Roll the sushi tightly using the bamboo mat, squeezing as you go.
  10. Slice the roll into 6 pieces using a sharp knife.
