Instructions
- Fluff the sushi rice with a fork and add a tablespoon of water if it seems dry.
- Place a nori sheet on the rolling mat with the rough side facing up and spread half the sushi rice on one side, leaving half an inch at the top.
- Add crab, avocado, cucumber, and drizzle two tablespoons of spicy mayo along the bottom edge.
- Roll the sushi tightly using the rolling mat, placing the unagi on top if using a full fillet.
- Slice the roll into eight equal pieces and drizzle with eel sauce before serving.
