Instructions
- Rinse the rice in a colander until the water runs clear.
- Combine the rice and water in a saucepan, bring to a boil, then reduce heat and cover, cooking for 15 minutes.
- Remove from heat and let the rice stand, covered, for 10 minutes.
- Mix rice vinegar, sugar, and salt in a bowl and heat in the microwave for 20-30 seconds.
- Transfer the rice to a bowl and mix in the vinegar mixture, allowing it to cool to room temperature.
- Place a sheet of nori on a flat surface and spread rice evenly over it.
- Cover the rice with plastic wrap and invert onto a sushi rolling mat, nori side up.
- Add shrimp, cucumber, and avocado on one side of the nori.
- Roll the sushi tightly using the mat, and press sesame seeds into the rice.
- Slice the sushi with a sharp knife and serve immediately.
