Shrimp Tempura Roll

Ingredients

Sushi Rice

  • 2 cups uncooked sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 ½ teaspoons salt

Sushi Rolls

  • 4 sheets nori
  • 8 pieces pre-cooked tempura shrimp
  • 8 strips cucumber
  • 8 slices avocado
  • 3 tablespoons black and/or white sesame seeds

Instructions

  1. Rinse the rice in a colander until the water runs clear.
  2. Combine the rice and water in a saucepan, bring to a boil, then reduce heat and cover, cooking for 15 minutes.
  3. Remove from heat and let the rice stand, covered, for 10 minutes.
  4. Mix rice vinegar, sugar, and salt in a bowl and heat in the microwave for 20-30 seconds.
  5. Transfer the rice to a bowl and mix in the vinegar mixture, allowing it to cool to room temperature.
  6. Place a sheet of nori on a flat surface and spread rice evenly over it.
  7. Cover the rice with plastic wrap and invert onto a sushi rolling mat, nori side up.
  8. Add shrimp, cucumber, and avocado on one side of the nori.
  9. Roll the sushi tightly using the mat, and press sesame seeds into the rice.
  10. Slice the sushi with a sharp knife and serve immediately.
