Ingredients

The crust

  • 2 cups crushed chocolate cookies
  • 1 cup vegan chocolate chips
  • 2 teaspoons coconut oil

The filling

  • 1 cup raw cashews (soaked overnight)
  • 1 cup melted coconut oil
  • ½ cup maple syrup
  • ¼ cup almond milk
  • 2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract

The topping

  • 1 cup vegan chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Melt chocolate chips and coconut oil for the crust and pour into a springform pan.
  2. Crush the chocolate cookies and sprinkle them on top of the melted chocolate, then freeze briefly.
  3. Drain and rinse the soaked cashews, then blend with the other filling ingredients until smooth.
  4. Pour the filling over the crust and freeze briefly.
  5. Melt the topping chocolate chips and coconut oil, then pour over the filling.
  6. Freeze the pie until ready to serve, and thaw slightly before cutting.
