Instructions
- Melt the chocolate in a microwave-safe bowl, stirring every 20 seconds until smooth.
- Blend the melted chocolate, silken tofu, coconut creamer, and peppermint extract in a food processor until smooth.
- Add the Cocowhip to the mixture and blend again until combined.
- Pour the filling into the prepared pie crust.
- Freeze the pie for about three hours or until set.
- Let the pie sit at room temperature if it becomes too firm before slicing and serving.
- Garnish with additional Cocowhip before serving.
