Vegan Chocolate Silk Pie
Ingredients
The crust

raw walnuts

unsweetened cocoa or cacao powder

pitted dates (soaked for 10 minutes in warm water and drained)
The filling

silken tofu (drained, patted dry)

dairy-free semisweet chocolate chips

full fat coconut milk or coconut cream (or another dairy-free milk)
Instructions
- Prepare the crust by pulsing walnuts and cocoa powder in a food processor until fine.
- Process soaked dates until sticky, then mix in the walnut-cocoa meal until well combined.
- Transfer the mixture to a pie pan and press to form a crust, then freeze to set.
- Melt the chocolate chips using a double boiler or microwave, then blend with tofu and coconut milk until smooth.
- Pour the filling over the crust and smooth it out, then freeze until set or refrigerate for at least 2 hours.
- Serve chilled or frozen, optionally topped with coconut whipped cream.
