Ingredients

The pie crust

  • 1 9-inch baked pie crust

The filling

  • 1 can full-fat coconut milk
  • 1 to 2 teaspoons agar agar flakes
  • ¾ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ounces unsweetened baking chocolate

For topping

  • 1 batch coconut whipped cream
  • to taste dark chocolate shavings

Instructions

  1. Bake the pie crust and let it cool.
  2. In a saucepan, combine coconut milk, agar flakes, coconut sugar, and vanilla, and bring to a boil while whisking.
  3. Boil for 1 minute, stirring often to dissolve the agar.
  4. Remove from heat and stir in the chopped baking chocolate until melted and smooth.
  5. Pour the chocolate mixture into the baked pie crust and refrigerate for at least 4 hours to set.
  6. Once set, top with coconut whipped cream and chocolate shavings before serving.
