Instructions
- Prepare the crust by grinding the walnuts into a fine meal and mixing with maple syrup, coconut oil, and salt.
- Press the mixture into the bottom of ramekins and refrigerate to set.
- For the chocolate filling, rinse and drain the soaked cashews, then blend with the remaining filling ingredients until smooth.
- Pour the chocolate filling over the crusts and refrigerate to set.
- Prepare the vanilla topping by rinsing and draining the soaked cashews, then blending with the topping ingredients until smooth.
- Once the chocolate filling has set, spoon the vanilla topping over each serving and add chocolate shavings if desired.
- Serve immediately and enjoy.
