Ingredients

Crust

  • 1 cup raw walnut halves
  • 1 tablespoon maple syrup
  • 2 teaspoons melted coconut oil
  • a pinch salt

Chocolate Filling

  • ½ cup raw cashew pieces, soaked in water for 2 hours
  • ½ cup water
  • 2 tablespoons melted coconut oil
  • ¼ cup cocoa powder
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • a pinch salt

Vanilla Topping

  • ½ cup cashews, soaked in water for 2 hours
  • 2 tablespoons maple syrup
  • 3 tablespoons melted coconut oil
  • 3 tablespoons water
  • ½ teaspoon vanilla

Instructions

  1. Prepare the crust by grinding the walnuts into a fine meal and mixing with maple syrup, coconut oil, and salt.
  2. Press the mixture into the bottom of ramekins and refrigerate to set.
  3. For the chocolate filling, rinse and drain the soaked cashews, then blend with the remaining filling ingredients until smooth.
  4. Pour the chocolate filling over the crusts and refrigerate to set.
  5. Prepare the vanilla topping by rinsing and draining the soaked cashews, then blending with the topping ingredients until smooth.
  6. Once the chocolate filling has set, spoon the vanilla topping over each serving and add chocolate shavings if desired.
  7. Serve immediately and enjoy.
