Ingredients

Filling

  • ¾ cup raw cashew butter
  • ½ cup pure maple syrup
  • ½ cup virgin coconut oil, melted
  • 6 tablespoons almond milk
  • 1 to 1½ teaspoons pure peppermint extract
  • 1 cup packed baby spinach
  • pinch fine sea salt

Chocolate Ganache

  • ½ cup non-dairy chocolate chips
  • 2 tablespoons full-fat coconut cream
  • dash fine sea salt
  • tablespoons raw cacao nibs or crushed candy cane
  • fresh mint leaves for garnish (optional)

Instructions

  1. Line a small loaf pan with plastic wrap.
  2. Blend all filling ingredients until smooth, ensuring no chunks of spinach remain.
  3. Pour the filling into the prepared pan and freeze for 4 to 5 hours until solid.
  4. Prepare the ganache by melting chocolate chips, coconut cream, and salt in a pot over low heat until smooth.
  5. Remove the filling from the freezer and lift it out of the pan using the plastic wrap.
  6. Pour the ganache over the solid filling and scatter cacao nibs or crushed candy cane on top.
  7. Return to the freezer for about 10 minutes until the ganache is firm.
  8. Slice, garnish with mint if desired, and serve immediately.
