Instructions
- Line a small loaf pan with plastic wrap.
- Blend all filling ingredients until smooth, ensuring no chunks of spinach remain.
- Pour the filling into the prepared pan and freeze for 4 to 5 hours until solid.
- Prepare the ganache by melting chocolate chips, coconut cream, and salt in a pot over low heat until smooth.
- Remove the filling from the freezer and lift it out of the pan using the plastic wrap.
- Pour the ganache over the solid filling and scatter cacao nibs or crushed candy cane on top.
- Return to the freezer for about 10 minutes until the ganache is firm.
- Slice, garnish with mint if desired, and serve immediately.
