Ingredients

The filling

  • ½ cup coconut oil, melted
  • ¼ cup honey or agave nectar
  • ½ teaspoon organic peppermint extract

The coating

  • 1 cup chocolate chips

Instructions

  1. Combine coconut oil, honey, and peppermint extract in a jar.
  2. Whisk the mixture until smooth using a hand blender.
  3. Refrigerate the mixture for 2 hours until firm.
  4. Transfer the firm mixture into a peppermint patty mold.
  5. Place the mold in the freezer for 45 minutes until patties are firm.
  6. Melt the chocolate over very low heat and allow it to cool thoroughly.
  7. Dip the patties into the melted chocolate using a dipping tool.
  8. Transfer the dipped patties to a parchment paper-lined baking sheet.
  9. Place the baking sheet in the freezer for 15 minutes to set.
  10. Serve the peppermint patties.
