Mint Vanilla Iced Coffee

Ingredients

Minty Simple Syrup

  • 1 cup white granulated sugar
  • 1 cup filtered water
  • 1 bunch fresh mint leaves

For Assembly

  • to taste none ice
  • to taste none half-and-half or almond milk
  • 1 quart cold brew coffee

Instructions

  1. Combine sugar and water in a medium pot over medium heat, stirring until dissolved.
  2. Add mint leaves to the syrup and heat until almost simmering, then turn off the heat and steep for 30 minutes.
  3. Strain the syrup to remove mint leaves and store it in a jar or squeeze bottle.
  4. Fill two glasses with ice, add about 2 tablespoons of syrup to each, then pour in cold brew coffee.
  5. Top with cream or almond milk, stir, and adjust syrup to taste. Garnish with mint leaves.
