Ingredients

Cold Brew Coffee

  • 1 cup whole coffee beans
  • 4-5 cups coconut water or water

Vanilla Bean Coconut Milk

  • 1 14 ounce can full-fat coconut milk
  • 1 whole vanilla bean, seeds removed
  • 2-4 tablespoons honey, maple syrup or coconut sugar

Vanilla Iced Coffee

  • cold brew coffee
  • 2-4 tablespoons vanilla coconut milk
  • coffee ice cubes or regular ice cubes

Chocolate Coffee Ice Cubes

  • 2 cups brewed or cold brewed coffee
  • 3 tablespoons cocoa or cacao powder
  • 1 tablespoon honey or maple syrup

Instructions

  1. Grind the coffee beans and combine with coconut water in a pitcher. Cover and let sit at room temperature for at least 12 hours.
  2. Strain the coffee through a mesh strainer and chill in the fridge.
  3. In a saucepan, combine coconut milk, vanilla bean seeds, and honey. Simmer for 3-4 minutes, then steep for 10-15 minutes before storing in the fridge.
  4. Fill a glass with ice cubes, pour cold brewed coffee over it, and add vanilla coconut milk to taste.
  5. For chocolate coffee ice cubes, whisk together brewed coffee, cocoa powder, and honey, then freeze in ice cube trays.
