Ingredients

Coffee Base

  • 8 cups water
  • 2 cups coarse ground coffee
  • 1 stick cinnamon

Thai Cardamom Vanilla Coconut Milk

  • 14 oz full fat coconut milk
  • 3 tablespoons maple syrup
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • teaspoon ground clove

Instructions

  1. Combine coarse coffee grounds, water, and a cinnamon stick in a large pitcher and refrigerate overnight.
  2. In a saucepan, mix coconut milk, maple syrup, vanilla extract, almond extract, cardamom, nutmeg, and clove, then whisk together.
  3. Simmer the mixture on low heat for 20 minutes, stirring occasionally until it thickens slightly.
  4. Remove from heat and let the coconut milk mixture cool.
  5. Serve the iced coffee over ice and add the Thai Vanilla Cardamom Coconut Milk.
