Fall Pear Salad with Vanilla Fig Dressing

Ingredients

Spiced Nuts

  • 1 cup mix of pumpkin seeds, sunflower seeds and pecans
  • 2–3 tablespoons real maple syrup
  • teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • teaspoon cayenne

Vanilla Fig Dressing

  • 3 tablespoons olive oil
  • 2 ½ tablespoons balsamic vinegar
  • 2 tablespoons fig jam
  • ½ teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon pepper

Pear Salad

  • ¼ cup red onion, thinly sliced
  • 2 ripe pears sliced
  • 5 ounces baby arugula
  • ½ cup pomegranate seeds
  • cup crumbled gorgonzola cheese
  • ¼ cup dried currants

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the spiced nuts by tossing them with maple syrup, salt, and spices, then bake for 10-15 minutes until toasted.
  3. Make the Vanilla Fig Dressing by whisking all dressing ingredients together in a bowl.
  4. In a large bowl, combine arugula, red onion, spiced nuts, pomegranate seeds, currants, and gorgonzola cheese, then lightly coat with the dressing.
  5. Carefully add the sliced pears and toss gently to combine.
  6. Transfer the salad to a serving bowl and garnish with additional spiced nuts, gorgonzola, and pomegranate seeds if desired.
