Instructions
- Preheat the oven to 350°F.
- Prepare the spiced nuts by tossing them with maple syrup, salt, and spices, then bake for 10-15 minutes until toasted.
- Make the Vanilla Fig Dressing by whisking all dressing ingredients together in a bowl.
- In a large bowl, combine arugula, red onion, spiced nuts, pomegranate seeds, currants, and gorgonzola cheese, then lightly coat with the dressing.
- Carefully add the sliced pears and toss gently to combine.
- Transfer the salad to a serving bowl and garnish with additional spiced nuts, gorgonzola, and pomegranate seeds if desired.
