Ingredients

The dough

  • 1 can chickpeas, drained and rinsed
  • ½ cup almond butter
  • cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 3 tablespoons maple syrup
  • 1 tablespoon ground chia seeds
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground clove
  • ½ teaspoon ground allspice
  • ½ teaspoon ground ginger

The mix-ins

  • cup 60% cacao chocolate chips or cocoa nibs

Instructions

  1. Drain and rinse the chickpeas, then dry them with a paper towel and remove any skins.
  2. In a food processor, blend the chickpeas, almond butter, vanilla extract, maple syrup, pumpkin puree, chia seeds, and spices until smooth.
  3. Transfer the mixture to a bowl and fold in the chocolate chips.
  4. Chill in the refrigerator before serving.
