Shrimp and Lentil Lettuce Wraps

Ingredients

The filling

  • ½ cup green lentils (dried)
  • 1 tablespoon olive oil (or coconut oil)
  • 4 pieces green onions (chopped)
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons ginger (fresh, peeled and minced)
  • teaspoon cayenne pepper (red)
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • ¼ cup cilantro (fresh)

For serving

  • as needed cups Bibb lettuce

Instructions

  1. 1. Combine lentils with 1½ cups water in a saucepan and bring to a boil, then simmer until tender, about 20-30 minutes.
  2. 2. Heat oil in a skillet over medium heat and sauté green onions for 2-3 minutes.
  3. 3. Add shrimp, lentils, ginger, and cayenne to the skillet, cooking until shrimp is pink, about 4-5 minutes.
  4. 4. Stir in soy sauce and sesame oil, cooking for an additional minute or two.
  5. 5. Sprinkle with cilantro, spoon into lettuce cups, and serve.
