Shrimp and Lentil Lettuce Wraps

Instructions
- 1. Combine lentils with 1½ cups water in a saucepan and bring to a boil, then simmer until tender, about 20-30 minutes.
- 2. Heat oil in a skillet over medium heat and sauté green onions for 2-3 minutes.
- 3. Add shrimp, lentils, ginger, and cayenne to the skillet, cooking until shrimp is pink, about 4-5 minutes.
- 4. Stir in soy sauce and sesame oil, cooking for an additional minute or two.
- 5. Sprinkle with cilantro, spoon into lettuce cups, and serve.
