Ingredients

The filling

  • 1 cup red lentils
  • Tbsp olive oil
  • 1 cup chopped red bell pepper
  • ¾ cup finely chopped yellow onion
  • 1 cup matchstick carrots
  • 1 Tbsp minced garlic
  • 1 Tbsp minced fresh ginger
  • ¼ cup hoisin sauce
  • 2 Tbsp soy sauce
  • Tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 can (8 oz) water chestnuts
  • ½ cup chopped walnuts
  • ¼ cup chopped green onions
  • 2 Tbsp chopped cilantro
  • to taste sesame seeds (optional)

The wraps

  • 1-2 heads iceberg lettuce or butter lettuce

Instructions

  1. Simmer lentils in unsalted water until just tender, then drain.
  2. Heat olive oil in a skillet and sauté bell pepper and onion until softened.
  3. Add carrots, garlic, and ginger, and sauté for an additional minute.
  4. Stir in lentils, hoisin sauce, soy sauce, rice vinegar, sesame oil, and water chestnuts, cooking for one minute.
  5. Mix in walnuts and sprinkle with green onions, cilantro, and optional sesame seeds.
  6. Serve the filling warm in lettuce leaves.
