Instructions
- Combine strawberries, sugar, lemon zest, and vanilla in a bowl and let sit for 20-30 minutes to release juices.
- In a stand mixer, whip cream cheese until fluffy, then add ricotta and heavy cream, whipping until smooth and fluffy.
- Add vanilla to the cream mixture and keep it covered in the fridge until ready to use.
- Preheat the grill to medium heat.
- Grill the doughnuts for 30 seconds to 1 minute per side until lightly caramelized.
- Slice the grilled doughnuts in half and fill each with strawberries and a dollop of whipped ricotta cream.
