Strawberry Shortcake Grilled Doughnuts

Ingredients

The strawberries

  • 6 cups fresh strawberries, hulled and halved
  • 2-4 tablespoons granulated sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla

The doughnuts

  • 8 pieces glazed doughnuts

Whipped Ricotta Cream

  • 4 ounces cream cheese
  • 16 ounces whole milk ricotta cheese
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla

Instructions

  1. Combine strawberries, sugar, lemon zest, and vanilla in a bowl and let sit for 20-30 minutes to release juices.
  2. In a stand mixer, whip cream cheese until fluffy, then add ricotta and heavy cream, whipping until smooth and fluffy.
  3. Add vanilla to the cream mixture and keep it covered in the fridge until ready to use.
  4. Preheat the grill to medium heat.
  5. Grill the doughnuts for 30 seconds to 1 minute per side until lightly caramelized.
  6. Slice the grilled doughnuts in half and fill each with strawberries and a dollop of whipped ricotta cream.
