Ingredients

The donuts

  • cups gluten free all purpose flour, sifted
  • cup raw sugar or ½ cup sugar substitute
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • cups sliced strawberries + extra for decorating
  • ½ cup non dairy milk
  • 1 extra large egg
  • 2 tablespoons melted unsalted butter or refined coconut oil
  • 1 teaspoon vanilla extract

The glaze

  • 1 cup powdered sugar or sugar substitute
  • 2 tablespoons plain Greek yogurt or non dairy Greek yogurt
  • 1 teaspoon non dairy milk or water
  • 1 tablespoon strawberry puree

Instructions

  1. Preheat the oven to 350°F and grease the donut pan.
  2. Sift the flour and whisk in the sugar, baking powder, and salt in a large bowl.
  3. Blend the strawberries and non-dairy milk until smooth.
  4. Add the egg, melted butter, and vanilla to the blender and mix until combined.
  5. Pour the blended mixture into the dry ingredients in thirds, stirring gently after each addition until smooth.
  6. Spoon the batter into the greased donut pan, filling each mold.
  7. Bake for 15 to 17 minutes until golden brown.
  8. While the donuts bake, prepare the glaze by mixing the powdered sugar, Greek yogurt, non-dairy milk, and strawberry puree.
  9. Once the donuts are cool, dip them in the glaze.
