Ingredients

The donuts

  • 1 cup oat flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 cup mashed very ripe banana
  • 2 large eggs
  • cup almond milk
  • ¼ cup honey
  • 1 tsp vanilla
  • ½ cup finely chopped strawberries

The chocolate glaze

  • ½ cup white chocolate chips
  • 1 Tbsp coconut oil
  • 2 drops pink food coloring
  • assortment sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In one bowl, mix the almond flour, oat flour, baking powder, and salt.
  3. In another bowl, whisk together the mashed banana, eggs, almond milk, honey, and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined, then fold in the chopped strawberries.
  5. Spray the donut pans with nonstick spray and pipe the batter into each well.
  6. Bake for 10 to 12 minutes until golden and a toothpick comes out clean.
  7. Let the donuts cool for 2 minutes in the pan before transferring to a wire rack.
  8. To make the glaze, melt the white chocolate chips and coconut oil in the microwave, mixing until smooth.
  9. Dip the tops of the cooled donuts into the melted chocolate and top with sprinkles.
