Ingredients

The batter

  • 1 ¼ cups whole wheat pastry flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup mashed overripe bananas (about 2 bananas)
  • 2 tablespoons unsweetened applesauce
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract

Optional glazed icing

  • ½ cup confectioners’ style erythritol or powdered sugar
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. In one bowl, mix the dry ingredients: flours, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk the wet ingredients: eggs, mashed bananas, applesauce, maple syrup, and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Prepare two 6-count donut pans by spraying them with nonstick spray.
  6. Spoon the batter into a pastry bag, snip off the corner, and pipe the batter into the donut molds.
  7. Bake for 11 to 13 minutes until golden and a toothpick comes out clean.
  8. Let the donuts cool on a wire rack.
  9. For optional icing, mix erythritol, milk, and vanilla, then dip the cooled donuts in the glaze.
