Ingredients

The donuts

  • 1 ¼ cups whole wheat pastry flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon apple pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup apple cider
  • cup plain Greek yogurt
  • 2 tablespoons unsweetened applesauce
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract

The cinnamon sugar coating

  • 2 tablespoons coconut oil, melted
  • cup organic cane sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the dry ingredients: flours, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together the wet ingredients: eggs, apple cider, Greek yogurt, applesauce, maple syrup, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Prepare two 6-count donut pans with nonstick spray.
  6. Fill a pastry bag with the batter and pipe it into the donut wells.
  7. Bake for 10 to 12 minutes until golden and a toothpick comes out clean.
  8. Cool the donuts on a wire rack.
  9. Melt the coconut oil and mix with cinnamon and sugar.
  10. Coat each donut with the cinnamon-sugar mixture before serving.
