Ingredients

The donuts

  • ¼ cup aquafaba
  • ¼ cup avocado oil, olive oil, or melted coconut oil
  • cup coconut sugar or organic cane sugar
  • ¼ cup maple syrup or agave nectar
  • 1 tsp pure vanilla extract
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • pinch ground ginger
  • pinch ground nutmeg
  • cup unsweetened applesauce
  • ½ cup apple cider
  • cups almond flour
  • 1 cup gluten-free flour blend
  • 2 tsp baking powder
  • ½ tsp baking soda

Cinnamon sugar coating (optional)

  • 3 Tbsp melted vegan butter or coconut oil
  • 3 Tbsp coconut sugar or organic cane sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease the donut pans.
  2. Whip the aquafaba until soft peaks form and set aside.
  3. In a large bowl, mix the oil, sugar, maple syrup, vanilla, spices, and salt.
  4. Add the applesauce and apple cider, then mix well.
  5. Incorporate the almond flour, gluten-free flour, baking powder, and baking soda gently.
  6. Fold in the whipped aquafaba carefully.
  7. Fill the donut pans and bake for 20-22 minutes until a toothpick comes out clean.
  8. Let the donuts cool, then optionally brush with melted vegan butter and coat with cinnamon sugar.
