Ingredients

The donuts

  • 1 tablespoon vegan butter or coconut oil
  • 1 cup oat flour
  • 3 tablespoons oat flour
  • ¼ cup finely ground almond flour
  • ½ cup cane or granulated white sugar
  • teaspoons baking powder
  • teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons vanilla extract
  • 1 tablespoon apple cider vinegar
  • 11 tablespoons canned light coconut milk

The coating

  • ½ cup vegan butter
  • ½ cup cane or granulated white sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat the oven to 350°F (176°C) and grease the donut pan.
  2. Sift the oat flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg into a bowl and whisk together.
  3. In another bowl, combine the vanilla, vinegar, and coconut milk, then pour into the flour mixture and stir until combined.
  4. Spoon the batter into the prepared donut pan and level it off.
  5. Bake for 12 to 15 minutes until a toothpick comes out clean.
  6. Allow the donuts to cool slightly before turning them out onto a cooling rack.
  7. Melt the vegan butter and mix sugar and cinnamon in a bowl.
  8. Dip each donut in melted butter, then coat in the cinnamon-sugar mixture.
