Instructions
- Preheat the oven to 350ºF (177ºC).
- Grease the doughnut pan well with butter or coconut oil.
- Mix the dry ingredients in a medium bowl.
- Mix the wet ingredients (except egg whites) in a small bowl.
- Combine the wet and dry ingredients and whisk until well mixed.
- Beat the egg whites until stiff peaks form and gently fold them into the batter.
- Spoon the batter into the greased doughnut pan without overfilling.
- Bake for 12-13 minutes or until a toothpick comes out clean.
- Let the doughnuts cool in the pan for about 10 minutes.
- Use a butter knife to carefully separate the doughnuts from the pan.
- Let the doughnuts cool on a rack.
- For the frosting, sift together powdered coconut sugar and cocoa powder.
- Add coconut milk and whisk until smooth.
- Dip cooled doughnuts into the frosting and sprinkle with crushed almonds if desired.
