Banana Cinnamon & Sugar Doughnuts

Ingredients

The doughnuts

  • 2 ripe mashed bananas
  • ¾ cup cashew milk
  • 2 tablespoons honey
  • ¼ cup avocado oil or oil of choice
  • 1 tablespoon vanilla extract
  • ½ teaspoon sea salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon vanilla stevia
  • teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 2 tablespoons psyllium husk powder
  • ½ cup coconut flour

Cinnamon & Sugar topping

  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon

Instructions

  1. Blend all ingredients except for the coconut flour until smooth.
  2. Pour the mixture into a mixing bowl.
  3. Sift the coconut flour into the bowl to avoid clumps.
  4. Mix the dough with an electric mixer.
  5. Line a cookie sheet with unbleached parchment paper.
  6. Use a large ice cream scoop to portion the dough, packing it tightly.
  7. Bake at 375°F for about 35 minutes.
  8. Cool for five minutes before dipping in melted coconut oil and sprinkling with cinnamon and sugar.
  9. Enjoy while warm, pulling them apart to appreciate the texture.
