Ingredients

  • 3 cups brown rice
  • cups broth or water
  • 2 tsp taco seasoning
  • 1 tbsp diced chipotle in adobo
  • 1 tbsp lime juice
  • 1 tbsp maple syrup
  • 14 oz refried beans
  • 14 oz pinto beans
  • 1 chopped red pepper
  • cups corn
  • 2 chopped scallions
  • 2 sliced avocados
  • to taste cilantro

Instructions

  1. Rinse the brown rice and place it in the Instant Pot with the broth or water.
  2. Close the lid and cook on manual high pressure for 24 minutes.
  3. Let the rice sit for 5 minutes after cooking, then release the pressure and open the pot.
  4. Add the taco seasoning, chipotle, lime juice, maple syrup, and refried beans to the rice, stirring to combine.
  5. Add the pinto beans, red pepper, corn, and scallions to the pot.
  6. Close the lid and let the mixture sit for a couple of minutes to warm everything up.
  7. Season with salt if desired, then serve in bowls topped with avocado and cilantro.
