Ingredients

The beans

  • 1 cup dried pinto beans
  • 3 cups water

The seasoning

  • 1 teaspoon sea salt
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon dried Mexican oregano
  • to taste freshly ground black pepper

For serving

  • to taste fresh lime juice or lime wedges
  • to taste chopped fresh cilantro

Instructions

  1. Sort and rinse the pinto beans, discarding any stones or debris.
  2. Transfer the rinsed beans to the Instant Pot.
  3. Add water, salt, chili powder, cumin, oregano, and pepper to the pot.
  4. Secure the lid and cook on high pressure for 25 minutes.
  5. Allow the pressure to release naturally for 20 to 30 minutes.
  6. Once the float valve drops, remove the lid and drain the beans.
  7. Serve the beans with lime juice and cilantro, or use in other recipes.
