Dairy Free Green Mac and Cheese

Ingredients

The base

  • 1 cup cauliflower, chopped
  • 1 cup cooked potato
  • ¼ medium onion
  • 1 cup fresh spinach
  • 1 clove garlic
  • ¾ cup raw cashews
  • ½ cup unsweetened cashew or almond milk
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons fresh lemon juice
  • 1 ½ teaspoons sea salt
  • ¼ teaspoon mustard seed powder

The pasta

  • 16 ounces pasta of choice

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Chop the cauliflower and sprinkle with broth or oil, then spread on a parchment-lined cookie sheet and bake for 20 minutes until slightly crisp.
  3. Meanwhile, boil the potato and onion until soft.
  4. Once the cauliflower, potato, and onion are done, blend them with all other ingredients (except pasta) until smooth.
  5. Cook the pasta according to package directions, then drain and rinse.
  6. Return the pasta to the pot and pour the sauce over it, mixing over low heat until thick and gooey.
  7. Serve immediately.
