Ingredients

Dressing

  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ½ tbsp fresh squeezed lemon juice
  • tsp kosher salt
  • to taste fresh black pepper

Salad

  • 5 cups baby arugula
  • 4 pieces ripe figs, quartered
  • 4 oz fresh mozzarella, sliced and torn into pieces
  • 2 oz thin sliced prosciutto, torn into pieces
  • 8 to 10 pieces small fresh basil leaves

Instructions

  1. Whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper to make the dressing.
  2. Place the arugula on a large platter.
  3. Top the arugula with prosciutto, mozzarella, basil, and figs.
  4. Drizzle the dressing over the salad before serving.
