Prosciutto Wrapped Figs with Blue Cheese

Ingredients

The figs

  • 8 large figs
  • ¼ cup blue cheese, crumbled
  • 4 strips prosciutto, cut in half lengthwise

The salad

  • 6 cups baby arugula
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon golden balsamic vinegar
  • 1 pinch salt
  • to taste black pepper

Instructions

  1. Arrange arugula on salad plates or a platter.
  2. Cut figs in half nearly through from the stem end, leaving the blossom end intact.
  3. Stuff each fig with ½ tablespoon of blue cheese and press the halves back together.
  4. Wrap each fig with a half strip of prosciutto and secure with a toothpick.
  5. For grilling, preheat the grill to high heat and grill figs for 5 minutes, turning often until crisp.
  6. For air frying, preheat the air fryer to 400°F for 3 minutes and air fry figs for 5 to 6 minutes until crisp.
  7. Place the cooked figs over arugula and drizzle with vinaigrette.
