Easy Skillet Lasagna

uncooked lasagna noodles, broken into small pieces

shredded mozzarella cheese, divided

Instructions
- Heat a large skillet over medium-high heat and add oil, ground beef, zucchini, bell pepper, onion, and garlic. Cook until the beef is almost cooked through and the vegetables start to soften.
- Add marinara sauce, Italian seasoning, and water to the skillet, and bring to a boil.
- Stir in the broken lasagna noodles, reduce heat to low, and cover. Cook until noodles are tender, stirring occasionally.
- Stir in cottage cheese and ¾ cup of mozzarella cheese, then cook uncovered for an additional 5 minutes.
- Top with remaining mozzarella cheese, cover, and let sit for 5 minutes. Optionally, broil for a few minutes to crisp the cheese.
- Garnish with fresh basil before serving.
