Easy Skillet Lasagna

Ingredients

  • 1 teaspoon avocado oil or olive oil
  • 1 pound lean ground beef
  • 1 medium zucchini, diced small
  • 1 medium yellow bell pepper, diced small
  • 1 small onion, diced small
  • 4 cloves garlic, minced
  • 1 jar (24-ounce) marinara sauce
  • 1 teaspoon dried Italian seasoning
  • 1 ½ cups water
  • 8 ounces uncooked lasagna noodles, broken into small pieces
  • 1 cup cottage cheese
  • 6 ounces shredded mozzarella cheese, divided
  • to taste fresh basil leaves for garnish

Instructions

  1. Heat a large skillet over medium-high heat and add oil, ground beef, zucchini, bell pepper, onion, and garlic. Cook until the beef is almost cooked through and the vegetables start to soften.
  2. Add marinara sauce, Italian seasoning, and water to the skillet, and bring to a boil.
  3. Stir in the broken lasagna noodles, reduce heat to low, and cover. Cook until noodles are tender, stirring occasionally.
  4. Stir in cottage cheese and ¾ cup of mozzarella cheese, then cook uncovered for an additional 5 minutes.
  5. Top with remaining mozzarella cheese, cover, and let sit for 5 minutes. Optionally, broil for a few minutes to crisp the cheese.
  6. Garnish with fresh basil before serving.
