Ingredients

The meat

  • ½ lb uncooked 95% lean ground beef
  • ½ lb uncooked 99% lean ground turkey breast

The vegetables

  • 1 small onion, diced
  • 1 cup diced white mushrooms
  • 3 cloves garlic, minced

The seasonings

  • ½ teaspoon salt, divided
  • ¼ + ⅛ teaspoon black pepper, divided
  • ¼ teaspoon crushed red pepper flakes
  • 2 teaspoons Italian seasoning

The sauces and liquids

  • 24 oz jar pasta sauce
  • 8 oz can tomato sauce
  • 1 cup reduced sodium beef broth
  • 1 tablespoon balsamic vinegar

The pasta

  • 9 uncooked lasagna noodles, broken into 1” – 2” long pieces

The cheeses

  • 1 cup fat free ricotta cheese
  • ¼ cup grated Parmesan cheese
  • ¾ cup shredded 2% milk Mozzarella cheese

Instructions

  1. Mist a large sauté pan with cooking spray and heat over medium.
  2. Cook the ground beef and turkey until browned, breaking it up as it cooks.
  3. Add the onion and mushrooms, cooking until softened.
  4. Stir in the garlic, crushed red pepper, salt, and black pepper, cooking for another minute.
  5. Add the pasta sauce, tomato sauce, beef broth, balsamic vinegar, and Italian seasoning, stirring to combine.
  6. Add the broken lasagna noodles, ensuring they are covered by the sauce.
  7. Cover and bring to a boil, then reduce heat and simmer for about 15 minutes, stirring occasionally.
  8. In a bowl, mix the ricotta, Parmesan, and remaining salt and pepper.
  9. Once the pasta is cooked, flatten the top and dollop the ricotta mixture on top, then sprinkle with Mozzarella.
  10. Broil for 1-2 minutes until the cheese is melted and browned, or cover and cook on the stove until melted.
