Easy Chicken Parm Soup

Ingredients

The soup base

  • 1 tablespoon olive oil
  • ½ large onion, finely diced
  • 3 cloves garlic, minced or pressed
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 2 14-ounce cans crushed tomatoes

The pasta and spices

  • 4 ounces penne or favorite pasta for soup
  • ½ teaspoon dried basil
  • ¼ heaping teaspoon dried oregano

The protein and cheese

  • 2 cups cooked chicken, diced or shredded
  • ½ cup shredded Parmesan
  • 1 cup shredded mozzarella

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Cook onions until softened, about 5 minutes.
  3. Add garlic and red pepper flakes, cooking until garlic is golden.
  4. Stir in tomato paste and cook until it begins to caramelize.
  5. Add chicken broth and crushed tomatoes, then bring to a simmer and cover for 8 minutes.
  6. Stir in pasta, basil, and oregano, cooking until pasta is al dente.
  7. Mix in cooked chicken and Parmesan until warmed through.
  8. Serve in bowls topped with mozzarella.
