Instructions
- Heat olive oil in a large pot and sauté the onion until softened.
- Add minced garlic and sauté for another minute.
- Add sliced mushrooms and cook, covered, for 5 minutes.
- Stir in tomato sauce, chicken broth, honey, basil, oregano, and salt.
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
- Serve the soup in bowls and garnish with grated cheese.
