Instructions
- Preheat the oven to 350°F.
- Mix the crust ingredients in a food processor until combined, being careful not to over-process.
- Divide the crumb mixture evenly among the 12 slots of a mini cheesecake pan, pressing it firmly into the bottom.
- In a mixer, blend the cream cheese and sugar until smooth, then add eggs one at a time.
- Mix in the heavy cream and Baileys until well combined.
- Spoon the cream cheese mixture into each crust, filling them halfway.
- Bake for 18-20 minutes.
- Allow to cool for at least 20 minutes, then transfer to a wire rack to cool completely.
- Chill in the fridge for at least 2 hours before serving.
