Ingredients

The crust

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tsp sugar

The filling

  • 1 packet cream cheese (8 oz)
  • 2 tbsp heavy cream
  • 2 units eggs
  • cup sugar
  • ¼ cup Baileys

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the crust ingredients in a food processor until combined, being careful not to over-process.
  3. Divide the crumb mixture evenly among the 12 slots of a mini cheesecake pan, pressing it firmly into the bottom.
  4. In a mixer, blend the cream cheese and sugar until smooth, then add eggs one at a time.
  5. Mix in the heavy cream and Baileys until well combined.
  6. Spoon the cream cheese mixture into each crust, filling them halfway.
  7. Bake for 18-20 minutes.
  8. Allow to cool for at least 20 minutes, then transfer to a wire rack to cool completely.
  9. Chill in the fridge for at least 2 hours before serving.
