Mini Baileys Cheesecakes

Instructions
- 1. Preheat the oven to 350°F.
- 2. In a food processor, combine graham cracker crumbs, sugar, and melted butter until mixed.
- 3. Divide the crumb mixture evenly among the 12 slots of a mini cheesecake pan and press firmly.
- 4. Bake the crust for 10 minutes.
- 5. In a mixer, blend cream cheese and sugar for 3-4 minutes until combined.
- 6. Add eggs one at a time, mixing briefly between each addition.
- 7. Scrape down the sides, then add heavy cream and Baileys, mixing until combined.
- 8. Spoon the cream cheese mixture into each crust, filling them about ¾ full.
- 9. Bake for 18-20 minutes.
- 10. Allow to cool for at least 20 minutes before removing from the pan and placing on a wire rack.
- 11. Chill in the fridge for at least 2 hours before serving.
- 12. Top with whipped cream and other desired toppings.
