Mini Baileys Cheesecakes

Ingredients

The crust

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 2 tsp sugar

The filling

  • 1 packet cream cheese (8 oz)
  • 2 tbsp heavy cream
  • 2 units eggs
  • cup sugar
  • ¼ cup Baileys

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a food processor, combine graham cracker crumbs, sugar, and melted butter until mixed.
  3. 3. Divide the crumb mixture evenly among the 12 slots of a mini cheesecake pan and press firmly.
  4. 4. Bake the crust for 10 minutes.
  5. 5. In a mixer, blend cream cheese and sugar for 3-4 minutes until combined.
  6. 6. Add eggs one at a time, mixing briefly between each addition.
  7. 7. Scrape down the sides, then add heavy cream and Baileys, mixing until combined.
  8. 8. Spoon the cream cheese mixture into each crust, filling them about ¾ full.
  9. 9. Bake for 18-20 minutes.
  10. 10. Allow to cool for at least 20 minutes before removing from the pan and placing on a wire rack.
  11. 11. Chill in the fridge for at least 2 hours before serving.
  12. 12. Top with whipped cream and other desired toppings.
