Ingredients

The cupcakes

  • 2 1/4 cup all-purpose flour
  • 2 cup white granulated sugar
  • 1 cup baking cocoa powder
  • 2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon kosher salt
  • 3 large eggs
  • 3/4 cup buttermilk
  • 3/4 cup Baileys Original Irish Cream
  • 1/2 cup hot coffee
  • 3 tablespoon neutral oil
  • 2 teaspoon vanilla extract

The frosting

  • 1 1/2 cup unsalted butter
  • 3 1/2 cup powdered sugar
  • 1/2 teaspoon kosher salt
  • 3 tablespoon Baileys Original Irish Cream

Instructions

  1. Preheat the oven to 350°F and prepare a cupcake tin with liners.
  2. In a large bowl, mix the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the eggs, buttermilk, Baileys, coffee, neutral oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Fill each cupcake liner halfway with the batter.
  5. Bake for 18 to 20 minutes until a skewer comes out clean.
  6. Cool the cupcakes in the pan for 5 minutes, then transfer to a cooling rack.
  7. For the frosting, beat the butter, powdered sugar, and salt until fluffy.
  8. Add Baileys to the frosting and beat until well combined.
