Bailey's Chocolate Cookies

Ingredients

  • 1 cup butter, softened
  • cups sugar
  • 2 units eggs
  • 1 tsp vanilla extract
  • 2⅔ cups flour
  • ½ cup unsweetened cocoa powder
  • tsp baking soda
  • ¼ tsp salt
  • 1 tsp instant coffee powder (optional)
  • 8 Tbsp Irish Cream (Bailey's preferred)
  • 1 cup white chocolate chips

Instructions

  1. Whisk together the flour, cocoa powder, instant coffee, baking soda, and salt in a separate bowl.
  2. Cream together butter, sugar, eggs, and vanilla using an electric mixer until fluffy.
  3. Gradually add the Irish cream while mixing, scraping down the sides of the bowl as needed.
  4. Add the dry ingredient mixture and mix until combined, then fold in the chocolate chips.
  5. Refrigerate the dough for at least 2 hours.
  6. Roll or scoop the dough into balls and place them on a greased baking sheet.
  7. Bake at 350°F for 8-10 minutes.
  8. Transfer cookies to a cooling rack to cool and keep remaining dough refrigerated until use.
