Instructions
- Whisk together the flour, cocoa powder, instant coffee, baking soda, and salt in a separate bowl.
- Cream together butter, sugar, eggs, and vanilla using an electric mixer until fluffy.
- Gradually add the Irish cream while mixing, scraping down the sides of the bowl as needed.
- Add the dry ingredient mixture and mix until combined, then fold in the chocolate chips.
- Refrigerate the dough for at least 2 hours.
- Roll or scoop the dough into balls and place them on a greased baking sheet.
- Bake at 350°F for 8-10 minutes.
- Transfer cookies to a cooling rack to cool and keep remaining dough refrigerated until use.
