Instructions
- 1. Combine the heavy cream, Irish cream, and vanilla in a heat-proof bowl over simmering water and heat until nearly boiling.
- 2. Gradually whisk in the chocolate chips until completely melted.
- 3. Remove from heat, cover, and chill for about 1 hour until the mixture is firm enough to scoop.
- 4. Use a cookie scoop or spoon to form truffles and roll them in cocoa powder.
- 5. Refrigerate until ready to serve.
