Ingredients

  • 12 oz dark or semisweet chocolate chips
  • 4 Tbsp Irish cream
  • 2 Tbsp heavy cream
  • 1 tsp instant coffee powder (optional)
  • ½ tsp vanilla extract
  • to taste unsweetened cocoa powder (for dusting)

Instructions

  1. 1. Combine the heavy cream, Irish cream, and vanilla in a heat-proof bowl over simmering water and heat until nearly boiling.
  2. 2. Gradually whisk in the chocolate chips until completely melted.
  3. 3. Remove from heat, cover, and chill for about 1 hour until the mixture is firm enough to scoop.
  4. 4. Use a cookie scoop or spoon to form truffles and roll them in cocoa powder.
  5. 5. Refrigerate until ready to serve.
