Chocolate Truffles

semi sweet chocolate, finely chopped

toppings such as sprinkles, finely chopped nuts, and cocoa powder
Instructions
- Place the chocolate in a large bowl.
- Heat the cream in a saucepan over medium heat until steaming but not boiling.
- Pour the hot cream over the chopped chocolate and let it sit for 3 minutes.
- Stir the mixture until a smooth ganache forms; microwave if needed to melt any lumps.
- Cover the ganache and refrigerate for at least 1 hour until firm.
- Scoop out about 1½ tablespoons of the ganache and roll it into a ball.
- Roll the balls in your choice of toppings.
- Place the truffles on a parchment-lined sheet pan and chill until firm.
- Store in the fridge and let them sit at room temperature for 15-20 minutes before serving.
