Ingredients

The truffles

  • 16 ounces semi sweet chocolate, finely chopped
  • 1 cup heavy cream

The toppings

  • assorted toppings such as sprinkles, finely chopped nuts, and cocoa powder

Instructions

  1. Place the chocolate in a large bowl.
  2. Heat the cream in a saucepan over medium heat until steaming but not boiling.
  3. Pour the hot cream over the chopped chocolate and let it sit for 3 minutes.
  4. Stir the mixture until a smooth ganache forms; microwave if needed to melt any lumps.
  5. Cover the ganache and refrigerate for at least 1 hour until firm.
  6. Scoop out about 1½ tablespoons of the ganache and roll it into a ball.
  7. Roll the balls in your choice of toppings.
  8. Place the truffles on a parchment-lined sheet pan and chill until firm.
  9. Store in the fridge and let them sit at room temperature for 15-20 minutes before serving.
