Chocolate Truffles

semi-sweet chocolate, finely chopped

heavy cream

vanilla extract

fine shredded coconut

sprinkles or coarse/raw sugar

finely chopped chocolate

chopped nuts

to taste
freeze dried berries
Instructions
- Place chopped chocolate in a heatproof mixing bowl.
- Heat cream in a saucepan until it simmers, then pour over the chocolate and let it rest for 5 minutes.
- Add vanilla and stir until the chocolate is fully melted.
- Chill the mixture in the fridge for 2 to 3 hours until firm.
- Scoop out 1 Tbsp of the mixture and roll into balls.
- Roll the truffles in your chosen coating and return to parchment paper.
- Store in the refrigerator for up to 2 weeks.
