Ingredients

The truffles

  • 8 oz. semi-sweet chocolate, finely chopped
  • ½ cup heavy cream
  • 1 Tbsp heavy cream
  • 1 tsp vanilla extract

Coating options

  • to taste cocoa powder
  • to taste fine shredded coconut
  • to taste sprinkles or coarse/raw sugar
  • to taste finely chopped chocolate
  • to taste chopped nuts
  • to taste freeze dried berries

Instructions

  1. Place chopped chocolate in a heatproof mixing bowl.
  2. Heat cream in a saucepan until it simmers, then pour over the chocolate and let it rest for 5 minutes.
  3. Add vanilla and stir until the chocolate is fully melted.
  4. Chill the mixture in the fridge for 2 to 3 hours until firm.
  5. Scoop out 1 Tbsp of the mixture and roll into balls.
  6. Roll the truffles in your chosen coating and return to parchment paper.
  7. Store in the refrigerator for up to 2 weeks.
