Instructions
- Melt the chocolate and set aside to cool slightly.
- Whisk together the flour, cocoa powder, espresso powder, baking powder, and salt.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla, and beat until combined.
- Mix in the melted chocolate until well combined.
- Gradually add the dry ingredients and mix until just combined, then fold in chocolate chips if using.
- Chill the dough in the refrigerator for 20 minutes while preheating the oven to 350°F (177°C).
- Scoop the dough into balls and place on baking sheets lined with parchment paper.
- Bake for 12-13 minutes until edges are set but centers are soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
