Ingredients

  • 2 four ounce bars semi-sweet chocolate, coarsely chopped
  • ¾ cup all-purpose flour
  • ¼ cup natural unsweetened or dutch-process cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 Tablespoons unsalted butter, softened to room temperature
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Melt the chocolate and set aside to cool slightly.
  2. Whisk together the flour, cocoa powder, espresso powder, baking powder, and salt.
  3. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla, and beat until combined.
  4. Mix in the melted chocolate until well combined.
  5. Gradually add the dry ingredients and mix until just combined, then fold in chocolate chips if using.
  6. Chill the dough in the refrigerator for 20 minutes while preheating the oven to 350°F (177°C).
  7. Scoop the dough into balls and place on baking sheets lined with parchment paper.
  8. Bake for 12-13 minutes until edges are set but centers are soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
