Instructions
- Preheat the oven to 350°F and prepare baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Melt chocolate and butter in a heatproof bowl over simmering water, stirring until melted and cool slightly.
- In a separate bowl, mix granulated sugar, brown sugar, and eggs, then whip until pale and fluffy.
- Combine the cooled chocolate mixture with the egg mixture and blend well.
- Add the flour mixture and mix until just combined, folding gently to incorporate.
- Drop spoonfuls of dough onto the baking sheets, spacing them apart.
- Bake for 10 to 12 minutes, rotating the pans halfway through, until cookies are puffed and slightly under-baked.
- Let cool on the baking sheets for 5 minutes before transferring to a wire rack.
