Ingredients

  • ½ cup unbleached all-purpose flour
  • ¼ cup Dutch process cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 8 oz 60% chocolate bars, chopped small
  • 5 Tbsp unsalted butter, diced into pieces
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs (cold)
  • tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. Melt chocolate and butter in a heatproof bowl over simmering water, stirring until melted and cool slightly.
  4. In a separate bowl, mix granulated sugar, brown sugar, and eggs, then whip until pale and fluffy.
  5. Combine the cooled chocolate mixture with the egg mixture and blend well.
  6. Add the flour mixture and mix until just combined, folding gently to incorporate.
  7. Drop spoonfuls of dough onto the baking sheets, spacing them apart.
  8. Bake for 10 to 12 minutes, rotating the pans halfway through, until cookies are puffed and slightly under-baked.
  9. Let cool on the baking sheets for 5 minutes before transferring to a wire rack.
